Eggs for Breakfast collection No.2 - Turkish Menemen

There is nothing quite as filling and wholesome as some freshly cooked eggs and toast for breakfast. Eggs are very nutritious and a vital source for healthy calories, proteins, fats, vitamins, etc. Hence it is one of the globally favorited breakfast dish and is prepared in many versatile forms. 

 

So here is a tried successful recipe of Menemen, a Turkish breakfast favorite, commonly found as their street food. It is flavorful and a great alternative to the plain boring sunny side up! I even prepare this for dinners on those nights you can't care to put in great efforts.

 

To serve 3 persons

 

You will need:

  • 3 eggs 

  • 1 large ripe tomato grated

  • 1 medium sized onion finely chopped

  • 1/2 red or green capsicum finely chopped

  • 1 teaspoon cumin powder

  • 1/2 teaspoon sugar

  • Salt and fresh black pepper

  • Few tablespoons olive oil

  • A handful of finely chopped fresh coriander 

  • 3 table spoons of thick yogurt (Greek yogurt will be a great option)

  • 1 teaspoon of fresh crushed garlic

Method:

  • In a heavy bottom pan, heat some olive oil and saute the onions, tomato and capsicum. Season with sugar, salt, pepper and cumin powder. Allow this to soften very well and mash it lightly with a potato masher. 

  • Make 3 pockets into this mashed goodness and crack an egg into space. Cover the pan with a lid and allow to cook for 3-5 minutes on a medium flame.

  • While serving top with some coriander leaves.

  • Add a dollop of thick yogurt mixed with fresh crushed garlic on the side.

  • Serve hot with a good quality toast.
