Blueberry Cinnamon Oats (Vegan breakfast recipe)

What you need (serves 2-3 persons)

  • 2 cups - Good quality porridge oats

  • 10-15 Blueberries - Fresh or frozen as per availability

  • 2 cups Almond milk or more depending on how thick you like your oats

  • Maple syrup to sweeten

  • 1/2 teaspoon cinnamon powder (you can add more depending on your preference of flavour)

  • Nuts, raisins, banana - toppings of your choice


1- Soak the oats in water overnight in the fridge. Add enough water just to make it soggy, not runny.

2- In a saucepan add the softened oats and almond milk, stir well until well cooked.

3- In a blender, add the blueberries and 3-4 tablespoons of the cooked oats. Blend until smooth and purple.

4- Mix the above in step 3 with the rest of the oats until it is all colored light purple.

5- Add the cinnamon powder.

6- Serve warm or chilled with the toppings of your choice. Ideal toppings are bananas and chopped nuts.
